The outcome was a night of culinary exploration at Helm: a multi-course tasting menu that highlighted IQOS quest for pleasure and progress. It was a special menu crafted by Chef Boutwood for the special night, made especially to pique the curiosity of their legal age attendees.

Tuna: liquid pearls emulates a bursting sensation along with tropical notes. An exciting blend of flavors that are firmly rooted in transporting you to different vistas altogether. A peculiar yet exciting mix of sensations.

Egg with sweet shrimps and butterfly pea: the saltiness gave way for the complexity of shrimp and pink oyster mushrooms with vinegar to complete the journey.

Bread: served with three choices of spread–bone marrow and cultured butter in applewood, seaweed with black truffle butter, and a pink rendered pork fat. It was meant to be served as an intermediary dish. The texture, thickness, and blitz of flavor refreshed the palette for the rest of the courses

Halibut: a fish concoction so intricate and expertly prepared that its texture is more comparable to a sorbet. An unbelievable mouthfeel, thanks to bergamot mint butter, celeriac, and trout roe.

Wagyu: a tender and flavor-rich A5 cut that melts in your mouth. The combination of vegetable paste and ättika gel could completely dench one’s taste buds in complexity and desire for more.

Crafting a curated menu for a premium and innovative brand like IQOS is expected to be a challenging endeavor–especially when translating it to actual dishes. But luckily, Chef Josh Boutwood loves to take on challenges like this.
IQOS and Helm is more than an explorative dinner experiment but an exhibition as to the prowess that curiosity and drive can have on a creative craftsman.
